Chicken and Cheese Enchiladas

cooking spray
1 small onion, chopped
1 1/2 cups cooked, shredded chicken
3/4 cup shredded cheddar cheese, divided
1 jar (16oz) salsa
4 oz. cream cheese
8 (7 or 8 inch) flour tortillas

Preheat oven to 350. Spray large skillet with cooking spray. Add onion and cook over medion-high heat for 4-5 minutes or until tender. Add chicken, 1/2 cup cheddar cheese, 3/4 cup salsa and cream cheese. Heat and stir for 2-3 minutes or until cheese is melted.

Spoon about 1/3 cup of chicken mixture down center of tortilla and roll up. Place in greased 13x9 inch baking dish. Repeat until filled. Drizzle with remaining cheese and salsa. Cover and bake 15 minutes, or until heated through and cheese is melted. Makes 4 servings.
