1 lb ground turkey or beef
1 ½ Tb cooking oil
1 Tb paprika
3/4 Tb cumin
2 large cloves garlic, sliced
1 Tb salt
1 Tb black pepper
1 ½ Tb cornstarch
1 Tb dried oregano
4 Tb chopped white onion
1 14-oz can whole stewed tomatoes
2 whole chipotle peppers in adobo sauce (optional)
1 can of corn
1 zucchini, chopped
1 cup chicken stock
cilantro, shredded cheese, sour cream (optional garnishes)
Using a large skillet, brown the meat in oil for 2-3 minutes. Add
all the ingredients except the vegetables and chicken stock and
saute for 2-3 minutes. Add the vegetables and stock and cook for
5-10 minutes. Adjust seasonings to taste, garnish, and serve.
